Shrimp Tomato Avocado Stack
just stack the ingredients in a circular cookie/biscuit cutter for a fun variation on some basic ingredients! the base is avocado mashed with garlic, lime juice, diced serrano chili peppers, salt & pepper. then I took some heirloom tomatoes and tossed them with some olive oil, salt & pepper and layered them above avocado. the shrimp were tossed in coconut oil, garlic, paprika, salt & pepper and quickly sautéed then placed on top... super easy, super tasty! :)
